Know-How to Make Sugar-Free Mango Ice Cream
Take 6 to 7 mangoes. Wash it and soak it in water.
After some time, take out its water, peel the mango, and remove its kernels.
Cut the mango, remove its pulp, and put it in the blender to make a smooth mango puree. Keep this in the fridge for some time. This will thicken the texture of the puree.
Take a big bowl and keep about 175 grams of fresh cream. Use low-fat cream.
Blend the cream well with a hand blender. You can also add two drops of vanilla essence to it. This will enhance the taste.
Blend it till it starts foaming, and it does not become floppy.
When the cream becomes foamy, add 4 tbsp honey and blend it again.
After blending for 3 minutes, add a pinch of saffron soaked in a tablespoon of milk.
Now add cooled mango puree to it. Once again, use a hand blender and run it for 3 to 5 minutes.
Take out this mixture in an ice cream tray and spread it well with a spatula.
Cover it with a lid and refrigerate for up to 3 hours.
After 3 hours, take it out and mix it well with a hand blender. This will make the ice cream soft.
Now add two handfuls of nuts and dry fruits to it and put it again in the same tray.
Freeze the ice cream for up to 5 hours or overnight. It will be ready to serve.
